I just got home from BlogFest last night, and whew, five days of go-go-go in Vegas has me feeling full of community love, and 100% wiped out. Unpacking all the amazing swag, catching up on my inbox, and, um, napping are going to take precedence this week over meal planning and cooking, so for the next few days, it’s full-steam-ahead on kitchen sink recipes.
Let’s be honest, though: kitchen sink meals are my go to just about all the time, because even when I meal plan I inevitably forget to get some crucial ingredient, or at the end of the day I’m just too tired to execute a full-on recipe.
My kitchen sink meals often follow similar themes, because I’m a creature of habit in both the grocery shopping and the meal-assembling senses. And when a formula works, hey, don’t fix it. But, since I could always use a little nudge out of my rut now and again, I went searching for recipe inspiration to jazz up my go-to kitchen sink meals.
I know what you’re thinking: the whole point of a kitchen sink meal is that you don’t need a recipe. It’s supposed to just come together on its own, for better or for worse.
This is all true. But I think there’s something to be said for an easily customizable recipe that might inspire a new combination of flavors, a variation on your approach, or even an alternative presentation.
So: without further ado, five recipes for you to use as a creative launching board when you look into your fridge this week and think, ugh, let’s figure out what to do with this cucumber and this tomato sauce.
Ready, set, create!
1. Spaghetti Squash Bolognese: spaghetti squash is the original zoodle – and you can dress it up with whatever you have in your fridge.
2. Easy Slow Cooker Chicken Verde: slow cookers FTW, and this recipe is light on ingredients and also paleo and gluten free.
3. Sweet Potato Egg Breakfast Sliders: chances are you or your neighbor has eggs on hand, and these breakfast sliders are a delicious way to put them to good use.
4. One Pan Mexican Quinoa: this recipe lends itself to endless customization, and makes cleanup easy, too.
