For once, I had more protein in my refrigerator than veggies. Weird. What to make for dinner…? Wasn’t feeling like plain chicken again and I didn’t want to defrost my frozen fish in the microwave and make it rubbery…so I looked in my freezer and saw almonds. Almond crusted chicken! Yes! But how can I make it a bit more funky and nutritious..? Chia seeds! I randomly threw this together and am so happy that I did. It’s nutritious and delicious. Chia seeds are a great source of Omega-3 fatty acids and fiber and I am always looking for ways to incorporate them into my meals. It’s tough finding ways to use Chia seeds in savory dishes, so I was quite happy when this experiment worked out. I hope you like it!
Almond and Chia Encrusted Chicken Breasts
2- 3 oz chicken skinless, chicken breasts, fat trimmed off
½ cup ground almonds/almond meal
2 tablespoons chia seeds
½ tsp dried parsley
salt and pepper to taste
2 egg whites
1 heaping tsp of ground mustard
nonstick spray or 2 tbsp grapeseed oil (your choice)
Cut the chicken breasts in half to flatten them out (place your hand on top of the breast and slice sideways towards the outside of your hand) or you can cover them with plastic and then smack them with a mallet or pan to thin them out a bit. In a large bowl, add the egg whites and mustard and whisk until incorporated. Combine the almond meal and Chia seeds in a small food processor or blender and pulse until smooth. Pour mixture onto flat plate and sprinkle with dried parsley, salt and pepper. Mix with a fork to incorporate evenly.
Heat a large nonstick pan on medium to high heat. Dip each chicken piece into the egg white and mustard mixture and then lay them flat onto the plate with almond meal and Chia seeds. Press down firmly and then flip over until both sides are covered with the mixture. Place in the hot pan and cook for 3-4 minutes per side or until center is no longer pink.
Serve with a simple salad of thinly sliced cabbage and drizzle with red wine vinegar. This chicken is so moist you don’t any type of sauce to mess up its flavor. It’s DELISH! Enjoy!
