It’s the time of year when it’s hard to say no to holiday treats, but I’m trying to make healthier choices this season. That’s why almond butter is my secret weapon this time of year: it satisfies my sweet and salty cravings. This easy recipe for almond protein cookies will help you enjoy the holidays without overdoing it. These cookies are perfect to bring to a holiday party, or enjoy anytime you start craving something sweet.
ALMOND PROTEIN COOKIES
- 1 Tbsp cacao powder
- 1 Tsp Pumpkin Pie spice
- 1 Tsp Cinnamon
- 1/4 Cup Egg Whites
- 1/2 Cup almond butter
- 2 Scoops of Vanilla Protein (I love using IdealLean Protein)
- 1/2 tsp vanilla extract
- 1 Pack (1g) of Stevia sweetener
- Mix all ingredients in a bowl until smooth.
- Roll into tiny balls and place on a greased cookie sheet.
- Bake at 350 for 10 mins or until inside is fully cooked (check with toothpick).
- Cool and enjoy!
These cookies are good for about 1 1/2 to 2 weeks. I stored mine in a latch storage jar to keep them fresher longer. You can eat 3 of these cookies and not feel guilty for indulging in a sweet treat. We all need cookies in our lives sometimes right? These little cookies are high in protein too!
