Since I recently posted about making vegan “cream,” I thought it only appropriate to give you a really simple way to use it. I’m not a huge pasta person but every now, on a particularly cold night or when I’m feeling especially fatigued, it sounds comforting.
Here’s a really simple take on Fettucini Alfredo:
- 1 tbsp olive oil
- 1 1/2 cup2 chopped mushrooms
- 1 had baby broccoli, chopped
- Cashew cream
- Quinoa pasta spirals (whole wheat pasta also works well!)
Heat the olive oil in a pan over medium heat. Add the mushrooms and saute for 3 minutes. Add the broccoli and saute for another 5-7 minutes. Meanwhile, prepare the pasta according to package directions. Add the cashew cream sauce to the veggies and stir in to the pasta. Easy peezy.
