Before rushing out for work in the morning, I threw together this simple, nutritious green smoothie. What I love about green smoothies is that you can get your daily recommended servings of fruits and vegetables just in one smoothie!! In this smoothie, you are getting 2 ½ servings of fruit and about 2 servings of veggies all in one simple drink, not to mention the healthy punch of vitamins, minerals, fiber, antioxidants, ant-inflammatory powers and omegas 3’s and omega 6’s from the Chia seeds. Phew! Long list of goodies…and they’re all in your tummy 🙂 Score!!!
Pineapple Blueberry Green Smoothie
Makes 3 cups
1 cup pineapple, cut into chunks
1/2 cup blueberries
1 small apple core removed and roughly chopped
4 large kale leaves, roughly chopped
2 large red chard leaves, roughly chopped
1 tbsp wheat germ
1 tbsp Chia seeds
1 tbsp organic, cold or fresh pressed coconut oil
1/2 cup unsweetened almond milk
1/2 cup water
Optional: Add extra water if you like a thinner consistency. If you like an icier consistency, add a couple of ice cubes.
Place the greens and liquids in a blender first. Blend on high until the greens break down and are no longer fibrous. Add remaining ingredients and blend until smooth, adding additional water or ice cubes if desired.
If you know you will be starving in an hour after drinking this smoothie, add 1/2 cup of raw oats and 1 scoop of your favorite protein powder while the blender is going. If you don’t do the protein powder thing, add 1 tablespoon of almond butter. The extra protein and carbs will fill you right up and provide you with fuel-burning energy.
