Remember Dr Seuss’s Green Eggs and Ham? Doesn’t sound like the most appetizing breakfast, does it?
Well, if there’s one thing to note, it’s don’t knock something before you try it. You never know what you’ll think, like, or want, until you try it for yourself. And while Dr. Seuss nearly had it right – I mean, I truly love the concept of having something green first thing in the morning – I prefer getting my greens in the form of rich, dark veggies, with a side of healthy, protein packed eggs. In fact, I always say green smoothies and eggs for the win if you really want to start your day on the right foot. You’ll get all the nutrients and protein you need to jumpstart your day! Try my 3 tried-and-true protein, vitamin and and fiber packed breakfast ideas instead!
Green smoothies and eggs, anyone?
Power Greens Smoothie and Healthy Deviled Eggs
Since I’m always rushing out the door first thing in the morning – usually with the sun – to teach a yoga class (or if I’m lucky, take a yoga class) – I know it’s important for me to get in a full serving of veggies and protein with my breakfast so that I can power through my early morning, into the mid-morning hours and curb any pesky cravings. I love this Power Greens smoothie – it’s chock full of kale and spinach – and is the perfect way to jumpstart the day. To make sure I’m also getting ample protein in the morning,
I love to replace my usual side of hard-boiled eggs with these tasty, and nutritious deviled eggs! They’re easy to pack and I love to eat them alongside my green smoothie or sometimes save them until after class for a little extra pick me up! And to get the most of my healthy breakfast, I don’t just use any eggs of course; instead I use Eggland’s Best eggs. They have 10x more vitamin E, 6x more Vitamin D, and more than double the Omega-3s than regular eggs – for me, it’s a no brainer.
Green Machine Smoothie + Egg in a Hole
On Saturday mornings, I wake up before the sun for run club – which usually means up to 7 miles on the trails or roads – and then take a morning yoga class. It’s an action packed morning, to say the least. I always know that on these types of mornings, I need a substantial, yet healthy breakfast to keep me going through all of the miles and sweat. I love this green machine smoothie – with almonds, chard, and orange – as it gives me all the necessary vitamins, and nutrients paired with one of my childhood favorites: egg in a hole! For an action packed morning, I need all the help I can get – and love that I’m getting greens, as well as carbs from the toast, and protein from my very favorite Eggland’s Best eggs. Getting enough protein is SO important on a morning when I’m running and doing yoga, which is why I’m so in love with Eggland’s Best eggs. With each Eggland’s Best egg, I always know I’m getting 13% of the protein I need each day (music to a vegetarian’s ears!) so I stay fuller and more energized longer, ensuring I can crush the miles and stay in chair pose a little longer.
Somedays I just want it all in one cup. On the mornings when I need to be extra efficient, like say, when I’m teaching at 6 am, I like to put my complete and total breakfast in one cup, throw a lid on it and run out the door with it. And since I’m a very active vegetarian, I’m always on the lookout for better ways to incorporate protein into each and every one of my meals, which is why I’ve fallen in love with this protein-packed, energizing smoothie from Eggland’s Best.
This recipe uses Eggland’s Best 100% Egg Whites to give this tasty smoothie a protein punch! It’s the perfect way to pack in the protein on my most active and early days – it’s everything I need in one cup. And it gives me a nice little energy boost since Eggland’s Best eggs are packed with vitamins B2, B5, and B12, they’re these energy-giving vitamins combined with protein are always the star in my healthy, complete breakfast!
