Have you been on the quest for the secret to the world’s fluffiest eggs? You’re not alone! Ashley’s go-to secret is to whisk with cottage cheese!
Whisk two Eggland’s Best eggs together with ¼ cup cottage cheese and then scramble normally in the pan. They’re her secret ingredient to her Make-ahead Southwest Burritos – you can reheat these scrambled eggs without losing their texture. Genius!
Want to know the secret to the FLUFFIEST scrambled eggs in minutes? Whisk 2 @egglandsbest eggs together with 1/4 cup cottage cheese. Pour into the center of a pan on medium heat until the eggs begin to settle in the middle. Scramble until fully cooked. And the best part? These reheat well without losing their texture! When it comes to crepes, I’m usually a “drown it in Nutella” kind of girl. But Ashley has me salivating with these chicken and veggie savory crepes! Poblano hollandaise? Um, yes please!
Lunch couldn’t be simpler. We had crepes for dessert over the weekend so for lunch, I sauteed up a savory filling of chicken, mushrooms, diced tomatoes, spinach, and garlic, wrapped that up in two remaining crepes, and then layered on some poblano hollandaise. For a busy girl, time is a precious commodity. So keeping things quick and easy yet still delicious when it comes to cooking is always the goal, at least for me. And Ashley’s salmon burgers definitely fit the bill!
Cooking time is less than 20 minutes. Mix 1lb salmon, 2 Eggland’s Best Large Eggs, 1/2c bread crumbs, cilantro, garlic, ginger, and a little mustard in a bowl. Form into patties and cook in a pan. While those are sizzling up, combine 2 EB egg yolks and sriracha (to taste) and slowly whip together with ¼ cup olive oil until creamy to create the spicy aioli. Voila and enjoy!

It’s no wonder Ashley and her household go through so many cartons of EB eggs every week. How could you not when you’re whipping, whisking, boiling, and frying them up in so many delicious ways?!
