'Tis the season to make latkes! Every year, Nicci's family makes potato latkes with her family for Hanukkah. This year, she's health-ing it up with sweet potatoes and Egglands Best free-range eggs for added protein, Vitamin D, and Vitamin B12! Watch the video below for the full directions. If you're joining Nicci in the kitchen, you'll need:
- 1 dozen eggs
- 1 large sweet potato
- 1/2 c. Green onions
- 1/2 c. Cilantro
- 1/2 c. Parsley
- 1 c. Olive oil
- Dried herbs
- Dash of spices (cumin, coriander, turmeric)
- Dash of salt & pepper
